So I Love to cook. Love love. Baking, egh not as good, but being the fabulous daughter that I am I decided to bake a cake for my parents since they are coming to visit, and its near both of their birthdays! So being vegan is quite the adventure sometimes let me tell you, many things will go a-rye! I always use Ener-G egg replacer instead of eggs, and lemme tell ya it makes the most moist yummiest cakes on earth! (however brownies I have yet to perfect so don't try until further notice!!) anywho, so I'm usually s.o.l when it come to frosting, plus I don't have the funds to purchase any even if I wanted. So I googled up some frosting recipes and found one that tastes, luckily, quite amazing! Especially since I just used half my pantry! ;) Its a buttery, cream cheesy, mapley, vanilla mixture that is honestly to die for!!
1/2c tofutti better than cream cheese (room temp)
2-3tbsp vegan butter (room temp)
3-4tbsp sugar
2-3tbsp maple syrup
1-2tbsp vanilla extract
mix then put in fridge for 30 min!
So easy to say you can pretty much control how much of what you want in there, based on what you favor in flavor! But I really recommend it to everyone vegan or not!! But you'll need to double the recipe at least if you have a large cake, mine was only 9'x9' :) enjoy! I know I will!!
