So that little grainy tan stuff there that looks like little eggs well is actually a wonderful little whole grain called Quinoa! It is a complete protein that was recommended to me by my cousin and her husband. I've been vegetarian for 3 almost 4 years now and love finding new things to try! I also love to cook and to experiment so I was happy today when I spotted this at a local 'Raley's' in the natural foods section!
I made a Quinoa Tabouli (which is sort of like an antipasti really, it's a Mediterranean dish) and paired it with a few greens, and spinach, cherry tomatoes and of course avocado :) Delicious!
(ps: you can eat hot or cold, my sister actually paired the tabouli with vegetarian black refried beans and a bit of avocado, she said it was just as fabulous! Very versatile little grain. Very versatile little recipe!)
