Being the first weekend of my favorite season I had to try out a festive soup. It's a simple and quick recipe to enjoy on your first day of fall. This soup tastes just like fall, if fall had a flavor. The coconut gives it sweetness, the chili gives you a surprise kick of spice at the end of each spoonful and of course there is pumpkin which is the essence of fall. I had to wing it on this one a little bit since the market I was picking up my ingredients didn't have pumpkins just yet. Not that I was all that excited about dissecting a whole pumpkin, I mean I usually just draw on my jack-o-lanterns because of all those seeds, bleh. Instead I used one large tin of pumpkin puree (the only ingredient listed is "pumpkin" so I figured I was safe), thus I didn't roast the fresh pumpkin with thyme as it instructs so instead I threw in the thyme with the onion whilebsoftening and even left it in a bit when I combined the rest of the ingredients.
