tiny berry crumbles


I whipped up a full four course meal today, okay maybe not, but it did have four totally different components and I did it all under thirty minutes. yeah whoa. But what I really want to talk about is this dessert that came out of no where and just made a party in my mouth. Simple healthy fruity and delicious. Oh yes.

tiny berry crumbles
serves four half cup ramekins
ingredients:
1/4 cup organic rolled oats
1/8 cup walnuts (or nut of choice. pecans or almonds would be great)
1 tsp ground cinnamon
1 cup blueberries
1 cup raspberries
local honey to taste (or even pure maple syrup, um yum)

preparation:
Preheat oven to 350°. In cuisinart pulse rolled oats, walnuts and cinnamon until crumbly (seriously that's a thing). Spoon the mixture into ramekins and gently press about 1/4 inch into the bottom of each, leaving just a bit to sprinkle on top. In mixing bowl toss the berries with a touch of honey, how ever much is your preference. Fill the ramekins with the berries, sprinkle the remainder of the cinnamon oats & nuts on each and bake for about 35 minutes and mangia!
